tiny bit of chopped garlic (i can handle like 1/2 tsp)
1/4 cup pistachios
1/4 cup olive oil
blend in food processor
then add about 1 cup of spinach (or more) and a few basil leaves or 1 tbsp dried basil (sometimes i skip the basil, i really love spinach and it tastes good enough to me!)
grind it up, add more olive oil if needed
then add a lot of locatelli romano cheese yum!!!!!!

ok here so when I cook/ make stuff I really dont go by measurments... but ill do much best. :) First i put 1 garlic clove and about 1/4 cup of pistachios in the food processor with about 1/4 cup olive oil. Grind that all up. Add about 1-2 Tbsp of basil and a BIG handful (about 1 cup ish) of spinach and chop that up. If its consistency is too think, add some more olive oil. Then I take my cheese (I use Locatelli - its in the specialty cheese area and a bit expensive... but SO worth it... cause Im a total cheese snob lol) and grate it on the coarsest part on my cheese grater. I use quite a bit.... Just grate a bunch, put it in, chop it up, and then taste. Add a little salt (unless its salty enough from the cheese) and Viola! Spinach pesto! :)
